Post Pumpkins

Pumpkin transformationToday was pumpkin transformation.  You take the uncut pumpkins and make pumpkin puree.  Cut the top off the pumpkin and take out the seeds place in a casserole dish with a little water and microwave for about 10 min.  Check after 10 to see if a fork goes into the flesh nicely-like potatoes that are soft.  If not place them back into the microwave for about 5 min until soft.

Take out and let cool.  The skin should fall off if not scoop the flesh and place in a blender, food processor and pulse until smooth.

A small pumpkin yields about 2 Cups of puree to use in breads, muffins and pies.

You can freeze the amount for your favorite pie recipe to use for Thanksgiving.  Just thaw and use as you would a can of pumpkin.
